This is one of the staple lunch box recipes at my home. I pack this once a week for kid’s lunch as well as for my husband too. If you have cooked rice ready then you can make this in a jiffy. Capsicum is a very flavourful vegetable. We get this in 3 colors, red, green, and yellow. I always buy the green capsicum. But after moving to Hongkong we get all the 3 colors in one pack. I use the red capsicum for making pasta sauce, chutney, or dip. The green capsicum is mostly used for making Indian-style recipes. Somehow, I don’t like the yellow capsicum. I sometimes use it in rice or kadai paneer. I used sambar powder for making this recipe, you can use red chili powder and coriander powder too. My mom used to make fresh curry podi and use it for making capsicum rice. I have posted a version of millet capsicum rice, in that version we use idli milagai podi. Cook the basmati rice in a pressure cooker for 3-4 whistles by adding 1 cup of water.Spread this on a plate and keep it aside.
In a pan add oil and add the peanuts.Saute for a minute and add the onions.Add little salt and saute this till it becomes translucent.Now add the ginger garlic paste.Saute till the raw smell of the ginger garlic paste goes off.
Now add in the chopped capsicum. I used green capsicum.You can used mixed color of capsicum.
Add the sambar powder, garam masala, turmeric powder, and salt.
Mix well and cook this for 2-3 minutes on low flame.Let the capsicum be crunchy.If you feel the mixture is dry, sprinkle 1 tbsp of water and cook.
Now add in the cooked rice.Mix well evenly.Garnish with finely chopped coriander leaves.
Capsicum rice is ready.Pair this with simple onion raita or any vegetable of your choice.
