Carrot rice is one of the simplest meals, you can make it in a jiffy even with leftover rice. I have fond memories of taking this for my school lunch box. After my mom got retired, she used to make more varieties for our lunch box. One such recipe is this carrot rice. My friends used to love it and she always packs 2 boxes. Even her brinjal rice is more popular among my college friends. I remember making this for my friends when my mom was not in town. It is such an easy recipe. We are adding sambar powder in this carrot rice recipe, but you can add red chili powder and coriander powder too. This is not a one-pot meal but if you have cooked rice ready in hand you can make this quick. If you are packing this for the lunch box, you can pair this with potato curry or vendakkai curry. Some people need some gravy for a variety rice, in that case, you can pair this with a simple dal tadka. I am using basmati rice for this recipe, you can use raw rice or parboiled rice too.Spread the rice on a plate. Let this be in separate grains.
Add 1 tbsp of oil to a pan.Add cumin seeds and add chopped onions.
Saute till translucent.
Add the grated carrots.Now add in the red chili powder, garam masala, and salt.
Mix well and cook for 5 minutes.
Now add the cooked rice to this.
Mix well evenly.
Let this cook for a minute.Switch off the flameGarnish with chopped coriander leaves.
Carrot rice is ready.You can pack this for lunch box or you can serve this at home too.
