Karthigai appam Wheat flour appam

     Jack fruit pieces | pazhapazham |பலாப்பழம்  6 pieces      Jaggery  1/2 cup      Grated coconut  1/4 cup      Rice flour    1/2 cup      Cardamom powder  2 pinches      Coconut bits  2 tblsp (optional)      Ghee  1-2 tblsp      Baking soda  a pinch (optional)      Salt  a pinch                                           Video of how to make Jackfruit unniappam

Method:

Cut the jack fruit and put them into a mixer jar. Add grated coconut, jaggery and cardamom powder to this. Grind this into a smooth paste. In a wide bowl add the rice flour. You can use home made rice flour or store bought flour or idiyappam flour too. Roast the coconut bits in ghee and add to this. (if adding) Add the baking soda (if adding) and salt. Add the ground jackfruit puree to this. Mix well. Add little water to bring it to a right consistency. It should not be too thick or too thin. If you are going to deep fry in oil, then keep the batter thick. I used the paniayaram pan for this. Add few drops of ghee to the pan. Scoop in the batter to this. Keep the flame medium low. Cover it with a lid. Once when it is cooked on one side, flip on to the other side. If you want add few more drops of ghee. Cover and cook for few minutes. Ensure not to get it burnt. Keep the flame medium and maintain the temperature throughout. Take it out from the pan. Serve hot. Repeat this for the rest of the batter.
