Usually we make Idli, odsa, upma or paratha for breakfast. Sandwiches takes place once in 10 days in my kitchen. But bread always comes handy for a quick breakfast. You can make this toast recipe for breakfast as well. Also this corn capsicum cheese toast is a perfect party snack too. Do give it a try and do let me know how it turned out.
In a pan add 1 tblsp butter. Add 1 tblsp plain flour. Saute in low flame for 2 minutes.
Simmer the flame and add 3/4 cup milk. I used raw milk. You can add boiled cooled milk too. Do not add hot milk, else the flour will form lumps. Whisk well. The mixture will start thicken.
Add the corn ans capsicum to this. Cook in a low flame. Add 1/2 tsp pepper powder. Add chilli flakes and salt. Switch off the flame.
Cool this mixture completely. This will thicken after cooling. Cut the bread into triangles. Spread the corn capsicum mixture on the slices.
Sprinkle some grated cheese on the top. Bake in a oven for 7-10 minutes till the cheese melts.
Alternatively do the same on a tawa, by keeping it covered in a low flame till the cheese melts. Spread butter on the tawa for this method.
You can use fresh sweet corn as well, if using boil it separately and take out the kernels and use it for the corn capsicum cheese toast.
