It’s for those of you who already have my eBook (and for anyone interested in getting it!). I came up with this recipe for Caprese salad after visiting the farmer’s market and seeing juicy, ripe tomatoes everywhere! I immediately started wishing for Caprese salad. I mean, it’s the quintessential summer salad… the perfect way to showcase summer’s bounty of sweet vine-ripened tomatoes and fragrant fresh basil. Tomatoes, “cheese” and basil drizzled with high quality evoo, reduced balsamic vinegar, sea salt and freshly ground black pepper. I know, the ingredients are so simple but there’s something so addicting about this salad. Necessity is the mother of invention right? Well, in the summer, Caprese salad is a necessity. I couldn’t let what’s left of the season pass me by without making and enjoying this delightfully simple salad. Thankfully, I had some extra “cheese” dumplings in my freezer and came up with this dish. It reminds me so much of a real Caprese salad!
My “cheese” dumplings are easy to make – you just need 5 ingredients. They’re not vegan though – the recipe calls for gut-healing grassfed gelatin. I’m sure you can replace it with agar agar but I haven’t tried this myself. I hope you love this Caprese salad!
