Add water in a saucepan, a little salt, and 1 tsp of oil. Allow this to boil. Now add 1 cup of pasta, I used MAcroni pasta. You can use any variety of pasta.

Cook till it becomes soft. Reserve 1/3 cup of pasta water Drain the pasta and keep it aside. Do not run the pasta in running water. This will remove the starch and the masalas will not get coated on the pasta fully.

Add 1 tbsp of oil in a pan and add 1 thinly sliced onions Add a little salt and saute this.

Now add 2 tsp of ginger garlic paste Cook till the raw smell goes off.

Now add 1 cup of mixed veggies. I used carrots, peas and capsicum. Mix well.

Now add 1 tsp red chili powder, 1 tsp coriander powder, ½ tsp turmeric powder and salt. Mix well and cook for a minute.

Add 1 cup fresh tomato puree. I pureed one big tomato, if using store-bought tomato puree add 1/3 cup as it will be little thick and sour. Mix well Now add 1/3 cup of pasta reserved water

Let this cook for 5 minutes.

At this stage add the cooked pasta to this. Mix well.

Add 1 tsp oregano (optional) and add 2-3 tbsp grated cheese.

Gently combine well Indian-style masala pasta ready.

Notes: You can add sweet corn kernels, blanched broccoli to this pasta. You can add 1 tsp of garam masala in the last and give it a good mix. 2-3 tbsp of Fresh cream can be added before adding the cooked pasta. Indian masala pasta is a perfect one for kids lunch box or a weeknight dinner.
