I have many moms who find it very difficult to feed healthy stuff for kids. Especially for the lunch box, kids don’t prefer veggies. We can make this type of variety rice recipe and make their lunch box healthy and interesting too. Spinach is sauteed and pureed in this recipe, and then added to the cooked rice. A very simple recipe but quite tasty and healthy too. The vibrant green color of the keerai sadam is too attractive and tempting. If you are thinking about what to pack for your kid’s lunch box, you should try this recipe. If you want to make it more healthy, you can add cooked millet instead of cooked rice. You can add some par boiled veggies like carrots and peas to make the rice colorful and healthy. In a pan add 1 tsp oil and add the chopped spinach, garlic, and cumin seeds.
Saute this for 2-3 minutes till the spinach gets cooked. Let this retain its green color.
Take out and grind this into a smooth paste by adding little water.
In the same pan add 3 tsp of oil and add the mustard seeds, urad dal, chana dal, and peanuts.Saute till the dal turns golden brown.
Now add the onions to this.Add salt to this and cook till it becomes translucent.
Now add the ground paste.Saute for 2 minutes.
Now add the cooked rice to this.
Mix well evenly.Add 1 tsp of ghee to this.Mix well. Keerai sadam is ready.
Serve with raita or chips or vadam.
Notes:
You can use Indian palak, arai keerai or mulai keerai, amaranth leaves, or round spinach too.
Methi leaves | vendaya keerai won’t suit this keerai sadam.
Parboiled carrots and peas can be added to this keerai sadam.
You can use basmati rice to make this keerai sadam.
