Beetroot pulao Palak pulao
Basmati rice 1 cup Carrot 1 Green peas 1/4 cup Capsicum 3 tblsp (finely chopped) Onion 1 Cloves 3 Bay leaf 1 Cardamom 2 Ginger garlic paste 1 tsp Oil 1 tblsp + 3 tsp Ghee 1 tblsp Coriander leaves few Mint leaves few Red chili powder 1 and 1/4 tsp Coriander powder 1 tsp Cumin powder 1 tsp Garam masala 1 tsp Salt as needed Method:
Wash the basmati rice and soak it for 20 minutes in 1 and 1/4 cups of water. Chop the carrot into small cubes. In a pressure cooker, add ghee and 1 tblsp oil. Add bay leaf,cloves and cardamom. Add the ginger garlic paste. Saute for seconds. Add the sliced onions and saute till it turns translucent. Add few chopped mint leaves to this. Mix well. Add the carrot and green peas. I used frozen peas. Mix well. Add the red chili powder, coriander powder,cumin powder,salt and garam masala. Mix this well. Add the soaked rice to this. Add the soaked water to this too. Mix and cover the cooker. Pressure cook for one whistle and simmer it for 5 minutes. Meanwhile in 2 tsp of oil saute the finely chopped capsicum. I used red and green bell peppers. Let this be crisp. Open the cooker and add the capsicum and chopped coriander leaves. Mix this gently. Masala rice is ready. Serve with onion raita.
