For the past few months, we are enjoying the cold weather in Hongkong. Though it is not super cold as how US and Canada have, for us it is really cold. We have always grown up in tropical countries and always experienced hot weather. And the cold weather demanded a few doses of masala chai on a day. I love the way my friend in Singapore makes tea. She makes adarakwali tea every morning. A few times I tasted that too and I love the taste. I used the same method for making this recipe. Please add the ingredients as per your choice of taste. Pair it with a Masala vadai | Onion pakoda or simple Marie biscuits. So if you are looking for a perfect masala tea | masala chai recipe do give this a try.  

Masala chai recipe

In a mortar and pestle put a small piece of ginger, 2 cardamoms, 2 cloves, a small cinnamon piece and 1/8 th tsp of fennel seeds.Crush it coarsely. This will bring out all the flavors of the spices and make the masala chai| masala tea flavourful.

In a saucepan, add 1.5 cups of water. You can reduce the water if you want a thicker tea. Add the crushed spices.

Add 1.5 tsp tea powder. I used red label tea powder, you can use anything of your choice. Let this boil for 2-3 minutes.

Add ½ cup of milk to this. Add sugar as desired. Stir it well.Let this boil for a minute.Do not boil more after adding sugar, it will spoil the taste.

Strain the mixture.Serve hot. Masala chai is ready.
