Methi pulao is a simple flavourful one-pot pulao recipe, made in a jiffy and perfect for lunch box too. I learned this recipe from my friend who makes this so often. The main highlight of this pulao is, it doesn’t involve any grinding of masala. Only cardamom is used for flavour. When fresh methi leaves are in season, do try out this easy one-pot meal and make your busy mornings comfortable. You can pair this with any dry curry or simple raita or dal. Wash and soak the rice for 10 mins in 1 and 1/2 cups of water.
Wash the methi leaves and chop them finely. Keep it aside.Thinly slice the onions and finely chop the tomatoes.In a pressure cooker add oil and add the cardamom.Slit the green chillis and add this and add the sliced onions.Saute for a few minutes, the onions have to be crunchy, so do not overcook.
Add the tomatoes and saute for a few minutes.
Now add the chopped methi leaves, mint leaves, red chili powder, turmeric powder, and salt, and saute for a minute or two.
Stir it well and add the soaked rice.
Cover it with a lid and pressure cook till 1 whistle.
Keep in simmer for 7 minutes and switch off the flame.
Let the pressure release naturally, open the cooker, and fluff the rice.
Serve hot with onion raitha.
Note:
The addition of tomato is a must so do not skip this.The tomatoes used in this take out the bitterness of methi leaves.Methi pulao is a perfect lunch box recipe.
