Sometime back when Madhu posted about this cake on Instagram, I bookmarked the recipe. Apart from the no sugar, no egg, no maida options what fascinated me more is, it is an easy blender cake. Yes, you can blend all the ingredients in a blender and bake it. How easy right! That too for a person like me who hates the elaborate process of mixing dry ingredients separately, wet ingredients separately, and then cleaning up all the mess!!
In the original recipe, Almond milk was added but since I didn’t have that in hand, I used normal milk. Since I am on a gluten-free diet now, I wanted to replace the atta with some gluten-free flour. I had some jowar flour with me. Since I had tried Jowar cookies before, I thought I will use that in this No sugar, gluten-free cake recipe.
Use good quality dates for the best results. Also, some dates tend to be a little sweeter, in that case, reduce the number of dates to 20.
The texture of the cake was slightly dense and sticky, but the taste was too good. It’s definitely a guilt-free indulgence. I can say it is a diabetic-friendly cake recipe, but please consult your doctor or nutritionist before having this cake.

Sugarless, Eggless cake
Soak 25 dates in ½ cup hot water for 30 mins.
Transfer to a blender along with the water.Add in ½ cup oat flour, ½ cup Jowar flour (can replace with atta), 1 tsp baking soda, 1 peeled sliced apple and ¼ cup milk (you can use almond milk too), ¼ cup OilBlend together into a fine paste.
Transfer this to a greased baking tin.Feel free to lick the batter, it was so tastyI put a parchment paper below.Bake in a preheated oven at 170 degrees C for 25-30 mins.
Take out and gently invert the cake tin after 2 mins.Cool completely on a wire rack.Cut into desired shapes.
This cake tastes the best then next day.
