Rasmalai is a milk-based popular dessert recipe. Usually, rasgullas are made and then soaked in milk rabdi. In this recipe, I made rabdi at home and used instant store-bought rasgullas rather than preparing them at home. This is a perfect party dessert and a great crown pleaser too If you are hosting any party or Navaratri dinner this sweet is a perfect one. You can make this the previous day and store it in the refrigerator too. The addition of saffron and nuts makes the dessert richer. If you want to enhance the taste, even more, add 2 pinches of milk masala to this. You can check out my Homemade milk masala recipe. I have made this for many parties and also for Navaratri evenings too for guests. As this stays good in the refrigerator for 3-5 days, you can make it in advance. We are not using the sugar syrup in the rasgulla tins, we are using only the soft white balls.
What should I do with the leftover sugar syrup?
This is one of the common questions asked by many people after Diwali. My humble reply is please discard the leftover sugar syrup. As such we are consuming more sugar and this sugar syrup will be an extra dose. So happily discard the sugar syrup after consuming the rasgulla or gulab jamun. In a heavy-bottomed vessel, add the milk.
When it is warm, take 2 tbsp of milk and soak the saffron in it.
Once the milk starts boiling, simmer the flame and let this boil for 15 minutes.Keep stirring.
Now add the condensed milk and evaporated milk.Adding evaporated milk is optional. If you don’t get it in your place, just skip it. It gives a nice caramel taste to the rasmalai.
Now add the saffron milk to this.Mix well and let this boil for 10 minutes.
Meanwhile, drain the syrup from the rasgulla completely.
Gently squeeze it and add it to the milk.Switch off the flame.
Add the chopped nuts.Keep in the refrigerator for 6 hours.
Rasmalai tastes good when chilled.
