These were so, so good. Not only are they delicious, but they’re also made with less than 5 ingredients, making them super simple to make AND grain-free. I’m adding raw cacao powder to the batter and beet juice for color. I try to keep beet juice in my freezer – it makes recipes that call for red food coloring seem like a lot less work. You can make these red velvet waffles even more decadent by adding dairy-free chocolate chips to the batter. The waffles without chocolate chips have undertones of cacao. But I’m a chocolate lover, so after I poured the waffle batter into my waffle maker, I sprinkled lots of chocolate chips into the batter (you can’t see the chocolate chips in the actual waffle because they’re at the bottom). Adding the chocolate chips made these waffles taste like red velvet waffle brownies… AMAZING. I think I need to coin a term for a waffle-brownie. Maybe I’ll call it a waffnie. Yep, I definitely need to trademark the name waffnie™. Cronuts (croissant and donut hybrid) have nothing on the waffnies. You can top these with anything: fresh fruit, butter, syrup, etc. I decided to make a chocolate sauce to pour on top of my waffnies (I’m really trying to make that word happen) because I clearly can’t get enough chocolate. You can make these red velvet waffles crispy or soft and moist – depending on how long you cook them. I love crispy waffles so I let mine cook for quite a while (10-15 minutes). You can keep checking on the waffles and cook them until they’re done according to your preference. Eat these right away for maximum deliciousness. If you want to make them in advance, that’s fine too – just allow them to cool on a wire rack so that they don’t become too soft. Make these waffles waffnies for someone you love.
