Summer is almost here! And the unofficial start of summer (Memorial Day) is just days away. To help you prepare for hot summer mornings, I thought I’d share my favorite cold breakfast recipe: sweet summer cereal. This summer breakfast bowl is light but also filling. All you need to make a bowl of sweet summer cereal is: raw cereal, chopped fruit and milk (I use almond or cashew milk). What I love about my raw cereal recipe is that it’s so easy to make ahead of time. I keep this in a mason jar and scoop out a little every morning as needed. There’s absolutely no cooking involved.
While I do still enjoy a bowl of my warm paleo n’oatmeal on cool summer mornings, the truth is that once temperatures begin flirting with the 90s and 100s, my body begins to crave cold food. I start to want iced coffees, salads, ice pops, chilled vegetables and fruit. That’s why if given the choice between cold summer cereal and warm paleo porridge – I’d choose cereal. If you don’t make time for breakfast before running off to work – keep a jar of this cereal on your desk and some milk in the office fridge. You can use whatever milk you choose when making this cereal. If you want to use a homemade dairy-free milk, I have recipes for almond milk and coconut milk on the blog. You can adjust the amount of milk to taste. I typically mix ½ cup of cereal with 1 cup of milk. Stay cool 🙂
